Boiled Rice Pudding

Boiled Rice Pudding


Ingredients: (Serves 4)

6 ozs Pudding Rice
3/4 Pint Whole Milk
1 16 oz Can Evaporated Milk
3 oz Granulated Sugar
3 oz Sultanas

Method:

1. Put all ingredients in a large lidded pot, bring gently to boil.
2. Turn down to a very gentle simmer, stir occasionally, for around 40 minutes.
3. You may need to add a little more milk if too thick, especially if left in pot for any length of time. Also, be careful it doesn't burn, as it is easy for this to happen because of the thickness of the pudding. You can replace the tinned milk with equivalent measure of whole milk if you prefer. Omit sultanas if desired.
4. Serve with a dollop of cream or jam...mmmm!

I haven't made Rice Pudding in absolute years. But your recipe sounded delicious. It made my mouth water. So maybe I'll give it a try.
