Looking for an authentic " Ginger bread Loaf" Recipe

One of my best memories of my Mum (now Passed) when my Brother and I were wee, was sitting at the stove on a cold fall or winter night, waiting for the loafs of Homemade Gingerbread to come out of the oven. We were allowed one piece each straight out of the oven with butter dripping through it, because my mother swore that more before it had cooled would give us a terrible stomach ache. If I think about it hard enough I swear I can still smell it baking. Unfortunately this recipe was never found as my Mum did alot of baking pasted down from watching my Granny and I don't know if there ever was a recipe written out. I've tried several recipes but none compare to the one of my childhood. So Thanks so much to anyone who has a good old fashioned recipe.

Recipe of my dreams

This is the recipe I remember my mum making and it definitely is a treat now when I make it. Thanks so much for a much needed walk down memory lane.

Soft Gingerbread

Soft Gingerbread
Makes 1 loaf.

Ingredients
1/2 - cup butter, softened
1 - cup brown sugar
2 - eggs
2 - cups all-purpose flour, sifted
1 - teaspoon baking soda
1/2 - teaspoon salt
1 - teaspoon cinnamon
1 - teaspoon cloves
1 - teaspoon ginger
1/2 - cup molasses
1/2 - cup water, boiling

Preheat oven to 350° F. and grease loaf pan.

Method
  • In a mixing bowl, whip butter and brown sugar to a creamy mixture.
  • Add the eggs and beat.
  • Sift together the flour, baking soda, salt, cinnamon, cloves, and ginger.
  • Combine the boiling water and molasses and add to the mixture alternately with the sifted dry ingredients.
  • Beat well.
  • Pour batter into a loaf pan and bake for 40 minutes or until golden brown.
