Rich Man's Stovies

6 large potatoes sliced
1 medium onion chopped
1 Knorr beef stock cube
5/6 slices corned beef
salt & pepper to taste

Barely cover sliced potatoes with lightly salted water, bring to boil.

Skim potato scum/froth off.

Add chopped onion and crumbled beef stock cube and simmer for 15-20 minutes until potato softens and water reduces a bit.

Chop the corned beef and mix through with the potatoes for a couple of minutes more on a low heat ensuring the mixture does not stick to the bottom of the pan.

Season to taste and serve

Consistency is to your personal taste, either slightly wet or equally lovely much drier. Consistency also depends on the potatoes used.

The perfect meal for a cold miserable (dreich) day!!

The corned beef can be replaced with leftover cooked steak mince for an equally tasty meal. Some people like the potatoes still in a sliced state whilst others love it almost completely broken down like a mash
