A Scot in Aussie

I found your site accidentally, I was born and brought up in Fife and left the UK in 1972.
I made ginger wine with the essence from the coop in Kirkcaldy but after it sits a few weeks I get like horrible gooey bits going through it does anyone know what we are doing wrong?
