Scot's Pepper Pleasure Boats

Scot's Pepper Pleasure Boats

Seasoning Items
• Black pepper
• Worcestershire Sauce
• Salt
• Fresh Ginger
• Honey

Preparation Items
• Olive Oil
• Water

Sauce Items
• 2 Pieces of Dark Chocolate
• A Little Milk
• A little Feta Cheese
• 1 Glass of Red Wine


Cooking Items
• 4 Medium Size Red Bell Peppers
• 1/2lb Top
• 1/2lb Chicken
• 6 Mushrooms
• 1 Large Onion
• 1 Large Medium sized apple
• 1 hot red pepper
• Handful of dry raisins
• 2 Cloves of Garlic
• 4oz Feta Cheese
• 4oz Danish Blue Cheese


Equipment
• Frying Pan
• Baking pan
• Small pan
• Oven tray

Method: See Following Pages:-

Slice the 4 red peppers length-ways, emptying out the innards!
Lie in a baking dish, with ½ inch of water, and cook in a hot oven for 30 minutes.

Slice and cube the red meat
Fry in Olive Oil, seasoning with black pepper and Worcestershire Sauce.
When browned pour out onto a holding plate (especially the juices)

Slice and cube the chicken
Fry in Olive Oil, seasoning with black pepper and honey until golden brown
When browned pour out onto a holding plate (especially the juices)

Slice and cube onion, and garlic, apple and hot red pepper (strip and remove the seeds first of all)
Fry in Olive Oil, seasoning with black pepper, a knuckle of grated fresh ginger, and a little red wine
Add raisins towards the end of the frying process. Remove from heat when the raisins have swollen
When caramelized pour out onto a holding plate (especially the juices)

Take a small pan. Cover the bottom with milk, and heat it up to nearly boiling. Add the chocolate and stir vigorously until it's melted. (Watch it does not burn)
Add a few crumb like pieces of Feta cheese. Mix and melt until you get a slightly roux like consistency. This is virtually impossible but you know what I mean.

Take the pre-fried meats and vegetables and fry them again together
Add the Chocolate and cheese sauce
Add mixed Italian herbs
Add the rest of the wine, and heat and cook together for 5 more minutes.

Meanwhile remove the red pepper boats, and lightly fry them in hot olive oil front and back until brown and crispy.

Remove and place on the greased oven tray
Crumble pieces of feta cheese to the bottom of the pepper boats
Fill each pepper boat with to the top with the now cooked mixture
Add one slice of blue cheese on top of the mixture
Place under the grill and brown the cheese.

These boats can be served on any bed you choose.

Looks like fun - who said the Scots food is drab! Chocolate, garlic, peppers - would go down well with Iron Brew and a single malt - 5 stars for originality!

Such a splendid blending of flavors. The sweet of the honey and raisins, combined with the garlic and cheeses. I'm afraid my peppers have been far more mundane this this. I must give it a try!
