Hello! Can you tell me anything you know about ginger wine? A dear friend and neighbor relayed a story to me about her father always making ginger wine (nonalcoholic) for the children for Hogmanay. Thank you! Julie

My Mum used to make non alcoholic ginger wine every New Year too. I think you could buy a bottle of the 'essence' from the Co-op and add water and sugar. But I'm not 100% sure. Hi, yes the ginger wine your talking about was made almost exclusively by the co-op ! There were two varieties,one was just sweet ginger wine, the other was called ginger wine but had a real kick to it, took a sip and about thirty seconds later it caught the back of your throat!! ( great memories)!!

Sadly I come from the south of the border and haven't seen yulade in co-ops here. Is it worth me driving up as I have no idea of the price.I
I remeber my nans ginger wine as a boy......powder bought from the chemist.....delicious even though it stung my sensitive childs mouth.

It is usually within or close to baking ingredients if not displayed in separate display baskets.
Just did the sugar and water this evening in order to add essence tomorrow and bottle. My recipe is 4 bottles of ginger and 1 bottle of blackcurrant which makes a more fuller bodied beverage. Shame they stopped making the raspberry essence years ago as that mixed was the ginger was slightly less sweet than the blackcurrant.

I phoned them up (sorry I don’t have the no) and said I couldn’t buy the esssance anywhere ( in England)
The reply was:
"It only becomes available mid November and is restricted to Scotland"
He took my name and address, and believe it or not sent me 2 bottles 3 weeks later.

I have a couple of bottles of Yulade ginger wine left that I made in 2013 and have a wee drink occasionally (mostly at new year with some shortbread) it’s delish and gets better with age.
Have a gallon in garage made in 2016.
Also made Ginger and Blackcurrant mixed, it’s really smooth.
Also a gallon in garage.

I bought 4 bottles of ginger essence in the Co op in Gordon Street, Glasgow last Thursday so it looks like softer the fiasco of two years ago that the company remembered to order it from the manufacturers again but just in case I bought this year's essence last year and last week's purchase is for next year so hopefully I will always be prepared.

..... My Mother used to buy small bottles of Hayes ginger wine essence in the 1950s and 1960s, dissolved two lbs of sugar in four pints of hot water and mixed in the essence. We loved this non-alcoholic ginger wine as children.
..... I believe that the company who made this (Hayes?) were located in Scotland, but cannot find a trace of a company with this name now.
..... In the 1980s I bought some 60 ml bottles of Friar Tuck's Ginger flavour, which was mixed with sugar and water in much the same way as the Hayes essence. It was nice, but the ginger was not so fierce.
..... Old bottles of this are still available (for a lot of money) on E-bay, but the company was dissolved in 2003. Their address was FRIAR TUCK'S LTD. 19 MOORFIELD ROAD, BEN RHYDDING, ILKLEY, WEST YORKSHIRE, LS29 8BL.
..... I have found references to a product called "Abbott's ginger wine essence", but I have not found any yet. I have just found "Riddles ginger wine essence" and this is available from a company called Hop and grape Limited, telephone 01325 380780. the essence can be bought on-line for £2.85 per bottle at:
www.hopandgrape.co.uk/riddles-ginger-wine.html. They offer "SMOOTH" or "FLAMING HOT" and I have just ordered two of each, to see what they are like. They charged £4.95 P&P for four bottles giving a total order cost of £16.35.

James, I make two batches. A sugary one and one with sweetener for a couple of diabetics in the family. I think it tastes fine either way.
I never use the quantity of sugar stated as I think it's far too sweet. In our family we like it strong! I use 1 bottle of riddles extra hot , 250g sugar (or equivalent sweetener) and 1.4l of water so that it makes enough to fill 2 wine bottles. It blows you away and everyone in the family requests a bottle.

Co-Op sell you-lade wine extract there own label you make it up with 6pints of water they say 3.5lbs of sugar but I just put in 2lbs boil until sugar is dissolved when water is cold then add the wine extract
Also if you want try putting a piece of fresh peeled ginger in when boiling the water and sugar leave the whole piece of ginger in until it's cold then add the extract and leave overnight before taking the ginger out it will enhance the flavour you can also add whole chilli in for heat do not cut just Pierce with a knife or needle while boiling with fresh ginger

I bought 6 bottles of Yuletide essence in Co op store in Glasgow City Centre on Tuesday and there were still bottles on the shelf. Seems they remembered to order from manufacturer this year. Juse in case I have next year's supply too and intend to buy a year in advance as the essence keeps so long, then if there is a repeat of last year's debacle I should be prepared.

I was overjoyed to come across Yu-lade Ginger essence in our local Co-op the other day. I thought it had gone for EVER!! Ginger wine made with this concentrate was a much loved part of my childhood. A drink of this ginger wine along with a piece of home made buttery shortbread is a marvellous combination. Well done to the Co-op for having it on their shelves!

My mum used to make Ginger wine at Christmas too. Here is the recipe she handed down to me.

Ginger Wine
Essence Made up by Chemist
2 1/2 drams Essence of Ginger Tincture )
1 1/2 drams Cayenne Pepper )
1 dram Essence of Lemon )
1 oz Burnt Sugar )

Rest of Ingredients.
1 oz Tartaric Acid
6 Pints of Water
2 Lbs sugar

Method

Bring water to the boil, add 2 lbs sugar and ginger wine essence.
(presumably stir till sugar is disolved). Leave to cool.
Add Tartaric acid when cold.
Bottle.

The trouble is Yule-ade IS the coops brand. They get an external company to make it for them, but the external company isn't allowed to supply it to anyone else because coop own the name, the recipe and the licence. So when coop forget to place their order and it doesn't get made for them, it can't get made for anyone else either - so the customers who have enjoyed it every Christmas since time began, miss out unless we can find another kind. Big thanks to Mark at Dalston Pharmacy who posted me out six bottles of the Friar Tuck kind, I've just finished bottling my first batch today. Merry Christmas to all.

I always make blackcurrant and ginger wine at Christmas time it is a pity that Yu-lade isn't selling it any more.

Every year it gets harder to find last year we traveled the whole of Lanarkshire and Glasgow to find a Co-op that had some and we were lucky one of the Co-ops in Glasgow had it and would only sell me two bottles of each.

Yu-lade should be looking at selling their brand else where if the Co-op are not interested in selling it.

The coop aren't stocking yulade ginger wine this year, but it's not because of a production problem. I have spoken to the company that make it for them and the coop didn't place an order this year, so none has been made. You can still get Friar Tucks ginger essence though. I live in Dumfriesshire and there is a chemist in Lockerbie which sells the Friar Tuck version. I asked and they said they would be willing to post it out just email them at dalstonpharmacy@intrapharm.com with your phone number and they'll get back to you.

YES! You're right! My mother used to make it at Christmas and I have made it for my own family EVERY YEAR since 1973 and, yes, you can only get it from the Coop. I get mine from Rutherglen or Halfway Coops and it used to be called Friar Tuck and is now called "Yule Lade" Like a previous Comment, my eight children used to drink it by minute amounts in little Shot glasses and thought they were drinking the Hard Stuff!
THIS year they speak of a "Production Problem" by which it it means they completely FAILED to do the only nothing thing they SHOULD BE DOING!!!! SUPPLYING THE DEMAND!
Sounds like a complete DISASTER and we'll have to cancel Christmas …..!
By the way …. why did somebody from "Yule Lade" not phone up the Coop and remind them? Communication these days isn't that difficult ...

I too have been trying to get this from our local coop, only to be told that it was a production problem. Being a typical Scottish red head, I was none too pleased, so took it upon myself to contact Bells Pharmaceuticals who make it. They told me that they make this for the coop and only the coop, and have not been asked to produce any. So its not a production problem, its the bloody coop not ordering it in the first place! Wish they would just admit that they cocked up and apologise to the many many customers who look forward to this every year. Other shops normally stop stocking their usual products so they can stock Xmas stuff, but seems they coop can't even stock Xmas stuff.

I am 51 years of age and I can't remember Christmas without ginger wine made from yul ade essence from the Co op. Our family recipe is 2 - 1 ratio ginger to blackcurrant but it used to be ginger to raspberry which was not quite so sweet. Years ago when my mother could not get the raspberry essence she asked in the local Co op why and was told that the machine had broken and it was obviously never repaired so I hope that is not the problem this year. I travel miles to find a branch of the Co op selling the essence and luckily I have managed to secure enough ginger and blackcurrant essence for this year. I hope that the Co op are able to sort out the issues of this year by Christmas 2016.

My response from the Co-Op Customer Service office regarding Yu-Lade Ginger Wine Essence!!!

Hello,

This was not a decision as such that we made to withdraw the product, there was plans to stock the Yulade however unfortuanly due to situations out of our control there was a problem with the production of the product resulting in the sale of the Yulade having to be withdrawn.

I do apologise for any inconvinence this has caused to you. There is a very limited stock left over from last year and by limited I mean 6 bottles. If you email back with your full postal address I would be more than happy to send you one of these bottles out in the post.

My Dad used to make it for my Brother and I. Used to take the small bottles with us. The bottles used to be shaped almost like hearts. The new bottles are a lot smaller. I live on Canada now. Each time I am back in Scotland, I try to get some. Unfortunately, you can only get it near the end of the year. Last year I made a batch of Ginger and a batch of Blackcurrant. I kept some of each, and mixed some of each to make Blackcurrant and Ginger. Not gite as hot as the Ginger, but you could really taste it. Friend going back to Scotland in a couple of weeks. Hope she can find me some.

I tried the same recipe but using the grapes and alcohol old stock. Finally I ended up with the perfect blend of the wine! Everyone in our family liked it very much and we celebrated the Christmas Eve with lot pomp and joy!

When I was young, my mum made 'Ginger Wine' every year, just before Christmas. My brother and I were each given our own little bottle for the New Year and were allowed to use her crystal sherry glasses which we loved, as we felt very grown up.
She followed the recipe on the bottle but used half a bottle of Yulade ginger concentrate and half a bottle of the blackcurrant concentrate which she got from the Co-op. When the water and dissolved sugar came to the boil, she let it boil for a few minutes to make a light syrup. What remained in both bottles, made a fresh batch later on.
I too have made 'Ginger Wine' for many years now, using slightly less sugar. My children and grandchildren still get their own bottle and look forward to it each year.
P.S. I think it is a great tonic for coughs and clolds.

Thank goodness someone else remembers it being called Friar Tuck! It came from the co-op and was the children's drink at New Year. I have just made some and given it to English friends in Spain and they had never heard of it before but love it and they want me to bring some essence with me next time I visit.

Thanks Steve B. - your recipe sounds very much like my Mam gave me that my Granny had made up at the chemist every year - like you, I tried to get it made up in the 70s but no luck. I think I'll try again to source the ingredients and have a go - would try root ginger perhaps. We used to get Castle Wyness ginger wine essence; My Mam always added 1 or 2 lemons. Can't seem to get it now, and other brands aren't so good.

My Dad used to make Ginger wine for Hogmanay too with a shop-bought mixture I think was called Friar Tuck something - does that ring a bell with anyone?
But I now make something similar using ginger root.
Ingredients:
a chunk of ginger root about 1x2 inches
a 1/4-1 teaspoon spirits (vodka, whisky, brandy) (optional)
honey - or sugar
lemon juice (optional)

Rinse the ginger root (no need to peel it), and chop it into small slices and put it in a pot.
Add about a cup of boiling water, and add about 1/4 -1/2 teaspoon of spirits if using (the spirits help to extract the ginger flavour).
Put it on the stove and let it simmer gently about 15 minutes.
Strain the liquid into a cup and add about 1 teaspoon of honey or sugar, and 1 teaspoon lemon juice.
This will be quite gingery, so taste it and add cold water gradually till you like it. Also, adjust the honey and lemon to taste as well, you may want more honey, but it's a really individual thing. Usually this first straining makes about a cup.
But don't throw the ginger away yet! Add about a cup of cold water and another wee bit of spirits if using them, and let it simmer very, very gently for about half an hour, then strain etc as above, tasting as you go. Repeat the whole thing once more. The reason for doing this 3 times is that according to experts, the repeated boiling of the ginger gets more flavour out of it than just boiling it once for a longer time.
And, it seems to work!
Obviously, you can increase the quantities for bigger amounts for a bigger family gathering. .
Dilute as needed for children, leave out the lemon juice, add apple juice - experiment! It goes beautifully with whisky, brandy, rum etc., cold with ice, or warmed up for hot toddies for colds, or just for a winter warmer.

One bottle makes about 5 pints. I made some last night (the extra hot version) to stave off those winter cold.

By the way, I want to make an adult version - does anyone know what proportions of rum to add to the 'soft' ginger wine?

I remember getting the little bottle it came in full of the made up ginger wine all to myself. It was like the Werther's Original advert...I felt so special!

I make yulade ginger and blackcurrant wine every year for Christmas and New year. I use 2 bottles of ginger and 1 bottle of blackcurrant. I boil a full kettle of water and add to 1 kg of sugar and still until it is dissolved. Onsce it is cold I add all three bottles of yulade essence and then bottle it. I like it strong so you can put more water or sugar to taste or just put one or two bottles of essence in. BYW It is delicious added to some gin

Hi,
There is a company here in Australia that makes an extra strong ginger drink that is great by itself or I guess could be used as the base for ginger wine etc. It's called Rochester Ginger and the link is:

You can't get it in the supermarkets, they only sell it in health food shops, gourmet food shops etc. I like the original with the green label, it's the strongest and has the biggest kick. I was hoping to find a recipe for something like it here as it costs about $20 a bottle. If anyone is familiar with it and has a similar recipe I would love to get it.

I forgot to say that I add a blackcurrant jelly to the hot sugar mix.
The jelly gives the final drink a creamier, thicker feel in the mouth.
The essence, of course, is added when the liquid is cool.

P.S. You don't have to wait until Christmas to make ginger wine!

Ginger Wine - adding of camden tablet

Just reading where geordieinmacc mentioned the adding of a camden tablet to the finished product.

Are you saying to add just 1 camden tablet to the final mixture.

Why I ask, is because I have made some ginger wine recently using Co-op Yu-Lade essence and I notice that it is becoming, as we would say here in Northern Ireland, slightly barmy, which makes me think that it is starting to ferment slightly.
The bubbly/aerated effect is spoiling the smoothness of the ginger wine whilst drinking it.

Anyone else experiencing this effect?

Ginger essence recipe

Our family made ginger wine every christmas. We used to get the essence made up at the chemist. The recipe was
4 drams Burnt sugar colouring
2 drams Essence of ginger
4 drams Tartaric acid
1 dram Essence of cayenne
(1 dram = 4 ml)

To make the drink, combine 6 pints of boiling water with 2lbs of lump sugar , juice of 3 lemons and the essence. Stir until disolved and bottle when cooll.

I've no idea how long it keeps because we always drank it in a few days!
By the late 1970s it became very difficult to find a chemist who could make up the essence, so it has not been made since.

yu-lade ?? any preservatives

hi , i live in australia and its been 20years since i had the coop ginger yulade to drink ,, managed to source some on ebay ,, ive got the bottle , but im not sure if there is preservative Sodium Benzoate( E number E210- E219 )(E211 most common ) i have allergy to this now,
but it does say "natural lime Flavouring" etc, but i have found that some of these lime,lemon , ginger, flavours contain E211, ,, so is there any E numbers in the concentrate how can i find out , as i avoid "Natural Flavours" because unless it says preservative free ,, and i really want some Ginger wine for new year :(
as in oz all packaging disclose if preservative free or which ones it contains

I am supposing the most popular recipe is sugar, water and ginger essence, for a non alcoholic ginger wine? Is that it? How long do you need to keep it before drinking it.

have just been reading your comments on yulade ginger wine essence. I am now 64 and as a child the favourite drink at Christmas was ginger wine with blackcurrant as a close run second. We always bought it from the Co-op but you could also buy it from Boots the chemists. Tonight i am sitting with my wife and sister and her husband who is the only
one amongst us who does not know about ginger wine.
I do not know how the conversation turned to this but the Scottish contingent IE 3 out of 4 became quite nostalgic and excited about the memories of it all so much so that we found it on ebay and have ordered it. This year we will introduce it to our grandchildren and try to maintain the connection from all those years ago. It is not a drink for people on a diet but please try it I hope you will enjoy it as much as many Scots have over many years.

Yu-lade... traditional recipe

3 1/2 lbs sugar dissolved in 6 pints of water... Let it go cold then add the Ginger essence, stir, then set aside.
Do the same for a bottle of Black current essence.... Combine them both in a large container (clean bucket will work) then if you wish add the alcohol of your choice (1/4 pint)... Whiskey is ok but Rum is Yum.
Just made some more as had the last dregs with some shortbread.... It was delish..... Well it was 10 years old ! And it gets better with age.

You should try ebay in November & December every year.The name is ''co-operative Ginger Yu-lade'' and it is made by the Co-operative (a british company which shares it's profits with it's members).It is only sold in some of it's branches in Scotland and not the rest of the UK so getting a hold of it is quite difficult.I contacted a Lady called Amanda Statham at their head office and she,very nicely, sent me a little bottle (100ml which makes 6 pints after adding 3.5lbs of sugar).I am 50 years old & my mum made it 2 christmases running over 40 years ago and this year I will cook up a batch for the first time since then(when I found it on ebay I bought another 2 bottles).I hope this information helps you.Have a merry christmas when it comes.Raymond

My recipe for ginger "wine"

3 to 4 liters of water+ 1 and a half kilos of sugar+ 1/4 kilo sliced fresh ginger+ 4-5 de seeded dried red chillies.
Boil all of the above for about 20-30 mins and leave to steep overnight. Strain the liquid , add about 1 oz of citric acid crystals and if you want the colour, an ounce of sugar caramel...... Good after a festive meal, and can be given to kids too. I guess if you add some yeast, it will become alcoholic, but I have not tried that yet.

hello , can buy a ginger wine compound ( in small bottle ) called riddles ginger , comes in 2 strengths , used to have castle wynes ginger as child in newcastle but they no longer trade . just add water , sugar and enjoy !! add camden tablet an store in loft and enjoy mature taste year later !!

i have just made yu-lade (ginger wine) over this weekend (i added some extra ginger i bought in India for additional bite). The Coop stocked the essence last year (also blackcurrant, although years ago c.30-40 raspberry was the alternative to ginger).
The local store does not have any at the moment but i am sure it will be available elsewhere in larger Coop's. If not it is available on ebay.

hi you can buy ginger and blackcurrant essence from the co-op, I think this is the only place you can buy it from. Just add sugar and water and pour into bottles, it will keep for a while in a cupboard.

We are just having this discussion on Facebook - Some of the Scotland Pages...My gran made hers from Yu-Lade Essence from the co-op...I bought a bunch of bottles and make it hot when I've got the cold. Generally it was for kids - the nippy stuff (ginger) or the blackcurrant... The bottle says Dissolve 3.5 # sugar in 6 pints water - let cool and add one 1 bottles of essence - depends how strong you like it...I usually add at least 2..

Hi just finished making my ginger wine.Made with YULADE bought from the CO OP in Johnstone Scotland.Two bots.of ginger one bot.blackcurrant.4kilo sugar to 8 75clwine bots.The juice of two lemons and two oranges.Dissolve sugar let water boil for approx.10mins.Leave to go cold then add the essence and juice stir and bottle.You add a large glass of whiskey if you want.Now ready to drink.

Ginger Wine. This is the recipe without the essence.

1 gallon water
3 lb. loaf sugar
2 oz. root ginger
...4 oz. raisins
Juice and finely grated rind of 2 lemons (organic ones these days)
1/2 oz. yeast

Chop up the raisins, bruise the ginger with a hammer, put into a pan with water, sugar, lemon juice and rind. Boil for one hour, skimming frequently. Pour into a crock or tub, allow to stand until lukewarm, then stir in the yeast, crumbled up. Cover, stir every day for a fortnight, then strain and bottle. I came here to Australia from Scotland when i was 13 yrs old. My mum too made ginger wine.......she usually made non alcoholic for us kids and added rum for the adults. I can only remember 2
flavours....one ginger and the other blackcurrant. Anyway,you can get bottles of the essence from many places...
1st my uncle sent mine he got it from the co-ops but after he passed away i got it from a place in Scotland that sells online. I got so many bottles last time that i still have enough for a few more yrs yet lol..the original essence is called YU-LADE. There is one or two other brands but this is by far the best...and very easy to make. Yu-Lade.
